Baobab Blueberry Muffin

Ingredients

  • 2 tsp New Health Solutions Baobab powder
  • 250g all-purpose flour
  • 150g brown sugar
  • 1 ripe banana
  • 180ml non-dairy milk
  • 100ml olive oil
  • 1 tbsp baking powder
  • 1 tsp vanilla bean powder
  • ½ tsp nutmeg powder
  • 1 cup frozen blueberries
  • Additional brown sugar and berries for sprinkling on top

Method

Step 1 Preheat the oven to 180 C.

Step 2 Blend the banana, non-dairy milk, vanilla and brown sugar in a blender on high. Add olive oil and mix.

Step 3 In a large mixing bowl, stir together the flour, organic baobab powder, nutmeg powder and baking powder.

Step 4 Add the wet mixture to the dry and stir to combine.

Step 5 Gently fold in the blueberries.

Step 6 Spoon into a muffin pan lined with paper liners or lightly oiled.

Step 7 Sprinkle the tops with berries and brown sugar.

Step 8 Bake for 22-24 minutes at 180°C (Gas Mark 4).

Step 9 Let them cool for at least 10 minutes before removing from the pan.
